Mediterranean pasta salad with arugula & vegan feta

Ingredients:

  • 250 g pasta of your choice
  • 80 g olives
  • 80 g dried tomatoes
  • 50 g arugula
  • 100 g vegan feta

Ingredients for the dressing:

  • 5 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 1 tsp mustard
  • 1 tsp maple syrup
  • Herbs to taste
  • Salt

Classic pasta salad with tofu, corn & pickles

Ingredients:

  • 500 g pasta (e.g. fusilli)
  • 200 g frozen peas
  • 1 can of corn
  • 1 bell pepper
  • 1 pack of smoked tofu (approx. 180–200 g)
  • 200 g gherkins

Ingredients for the dressing:

  • 200 g vegan mayo
  • 200 g unsweetened vegan yogurt (e.g. soy yogurt)
  • 10 tbsp cucumber juice
  • 1 tbsp mustard
  • 1 tsp paprika powder
  • Freshly ground black pepper

Green power salad with pesto & pine nuts

Ingredients:

  • 250 g pasta of your choice
  • 200 g cherry tomatoes (halved)
  • arugula

For the dressing:

  • 3-4 tbsp vegan basil pesto
  • 80 g dried tomatoes
  • 2 tbsp pine nuts
  • 1.5 tbsp olive oil
  • 1.5 tsp lemon juice
  • salt and pepper
