Mango Salsa with Peanut Butter Tofu

INGREDIENTS (2 portions)

200g rice
1 mango
4 tomatoes
1/2 red onion
1 bunch of coriander
2 tbsp. lime juice
1-2 tbsp. sesame oil
chili powder

200g plain tofu 
2 tbsp. caramel Peanut Crunch Proteinspread


1. Cook rice. 
2. Cut mango and tomatoes into bite-sized pieces. Chop onion and coriander finely. In a bowl combine everything with lime juice, sesame oil and chili.
3. Cut tofu to small cubes, saute with sesame oil until gold-brown, then add peanut spread and saute for 1-2 minutes.
4. Serve rice, mango salsa and peanutbutter tofu on a plate.
