Summer Rolls with Peanut Sauce

INGREDIENTS
(makes 6 rolls)

ROLLS:
6 rice papers
1 nori sheet
1/2 block smoked tofu
1 carrot
1/2 cucumber
1/2 paprika
1/2 bunch of coriander
sesame seeds

PEANUT SAUCE:
2 tbsp. caramel Peanut Crunch Proteinspread
1 tbsp. tamari sauce
1 tbsp. rice vinegar
1 tbsp. lime juice
1-2 tbsp. warm water
chili powder

PREPARATIONS

1. Combine all the ingredients for the peanut sauce.
2. Cut your veggies, tofu and the nori sheet into slices. 
3. Fill a large bowl with warm water. Submerge rice paper into the water for 2 seconds.
4. Place rice paper on a board / a smooth surface. Now place a nori stripe, some veggies, tofu and coriander on top.
5. Fold the left and right edges of the rice paper in. Then roll up. The rice paper is sticky, it will seal itself.
6. Sprinkle with sesame seeds and dip into peanut sauce.
