Angel eyes – but with strawberries and healthy!
INGREDIENTS
Dough:
150 g oat flour
65 g coconut oil
80 g cashew butter
100 g erythritol
150 g ground hazelnuts
1 tsp baking powder
pinch of salt
Vanilla pod (optional)
Strawberry jam:
1-2 tbsp strawberry protein powder
Frozen strawberries
1/2 tbsp chia seeds
some water
PREPARATION
1. Preheat the oven to 180°C top/bottom heat.
2. Mix all ingredients for the dough in a bowl.
3. Now form small balls from the dough and press them down with your thumb.
4. To make the jam, first place the strawberries in a saucepan with a little water over medium heat until softened. Once softened, turn off the heat and add the chia seeds and protein powder. Mix everything well until a jam forms.
5. Now pour the jam into the holes in the dough and bake the cookies for about 15 to 20 minutes.
