The perfect clean lunch – super quick to prepare, easy to digest & full of nutrients!
Sweet potatoes are the perfect bread swap. They're naturally gluten-free, high in fiber, and (once cooled) provide resistant starch, which your gut flora loves. Topped with healthy fats (avocado and olive oil) and plant-based protein (tofu), they make a filling, gut-friendly, and clean meal—ideal for your healthy lunch break!
Ingredients (1 serving):
1-2 sweet potatoes
1/2 block smoked tofu (or tofu of your choice)
1/2 ripe avocado (“Guac ready”)
Cherry tomatoes
Microgreens
5-10 g olive oil
Spices of your choice
Preparation:
- Halve the sweet potato(s) lengthwise, brush with oil and bake at 200°C top/bottom heat for about 30 minutes.
- In the meantime, prepare guac, fry tofu and chop tomatoes.
- Remove sweet potatoes from the oven, top with spices of your choice, and season to taste. Optionally, refine with a dressing made from balsamic vinegar, nut butter (e.g., peanut or tahini), lemon, and spices.
