The perfect clean lunch – super quick to prepare, easy to digest & full of nutrients!

Sweet potatoes are the perfect bread swap. They're naturally gluten-free, high in fiber, and (once cooled) provide resistant starch, which your gut flora loves. Topped with healthy fats (avocado and olive oil) and plant-based protein (tofu), they make a filling, gut-friendly, and clean meal—ideal for your healthy lunch break!

Ingredients (1 serving):

1-2 sweet potatoes

1/2 block smoked tofu (or tofu of your choice)

1/2 ripe avocado (“Guac ready”)

Cherry tomatoes

Microgreens

5-10 g olive oil

Spices of your choice

Preparation:

  1. Halve the sweet potato(s) lengthwise, brush with oil and bake at 200°C top/bottom heat for about 30 minutes.
  2. In the meantime, prepare guac, fry tofu and chop tomatoes.
  3. Remove sweet potatoes from the oven, top with spices of your choice, and season to taste. Optionally, refine with a dressing made from balsamic vinegar, nut butter (e.g., peanut or tahini), lemon, and spices.
